Crab Stuffed Chicken Breasts

We have just come back from a super relaxing weekend at our place on the Chesapeake Bay on the Eastern Shore of VA. One of our favorite things to do is go crabbing. And drinking. Ok, mostly drinking. While we are crabbing. Ha. Thank goodness crabs are zero points.

We are super big cheesers. What can I say?
Anyway, our crabbing endeavors netted us 6 keepers this weekend.

We decided to drive up to Greenbackville and see if the Watermen had any for sale on their boats. We lucked out and ended up with half a bushel of crabs for super cheap because some lady cancelled her order. So, we ended up with 4 pounds of crab meat. Yeah. There are only two of us. HA. I prepped a lot of crab today. Crab Salad. Crab Cakes. Crab crab crab. Thank goodness it is freezable.
Tonight we had one of our favorites - Chicken Stuffed with crab, topped with cheese. This recipe is super easy, can be done on the grill, and tastes amazing. And, best yet, a serving is just 2 Smart Points.
Crab Stuffed Chicken Breasts
2 Boneless Skinless Chicken Breasts (0 Smart Points)
6oz lump crab meat (0 Smart Points)
2 tbsp light mayonnaise (2 Smart Points)
1/4c finely diced celery (0 Smart points)
2 thinly sliced green onions (0 Smart Points)
1/2 c Trader Joe's Almond Mozzarella Style Shreds, divided (use 1/4c per chicken breast) (2 Smart Points)
1/2 tsp Old Bay Seasoning, plus more to season the chicken
Olive Oil Spray
Preheat your grill.
In a bowl, combine crab, celery, green onion, and 1/2 tsp Old Bay. Gently fold in mayo. Divide crab mixture into two servings.
Pound chicken breast until it is approximately 3/4 inch thick. Spray each side with olive oil and sprinkle each side with Old Bay to taste. Place chicken on grill, and grill each side approximately 4 minutes per side. Make sure your chicken is cooked through.
Remove chicken from grill. Top each chicken breast with one half of the crab meat mixture, and then top with cheese shreds. Return to grill and close lid. Reduce heat to low, and cook for an additional 3 minutes, until the cheese melts.
